Grilled Chicken Salad

Whew – it’s warming up around here in Dallas! Although Spring officially begins March 20, there is no doubt it has already arrived. And here at artizone, that means we’re working on our figures (especially after indulging in Dulce de Leche Soufflés last week) and slimming down our caloric intake. Grilled Chicken Salad to the rescue!

Grilled Chicken Salad

Serves 4

Grilled Chicken Salad Recipe ingredients:

2 boneless skinless chicken breasts from Hirsch’s Specialty Meats
½ teaspoon sea salt from Rex’s Seafood
½ teaspoon freshly ground pepper from Rex’s Seafood
1 tablespoon olive oil from Texas Olive Ranch
½ pound spring mix salad From The Grocer
2 ounces pitted dried cherries from Scardello
2 ounces Larguetta Almonds, chopped from Scardello
1 package On Pure Ground Chevre, crumbled from Scardello

¼ cup olive oil from Texas Olive Ranch
1 tablespoon balsamic vinegar from Texas Olive Ranch
½ teaspoon salt From The Grocer
½ teaspoon freshly ground pepper from Rex’s Seafood
1 clove garlic, crushed and left whole From The Grocer

Ingredients for Grilled Chicken Salad

Warm a grill to medium high heat.  Pat the chicken dry, rub with olive oil, and season with salt and pepper.  Place the chicken on the grill and cook 6 minutes per side, until the chicken has dark grill marks and is cooked through.  Set aside on a platter to rest and cool to room temperature.  Once the chicken has cooled to room temperature, slice it along the diagonal, about ½” thick.

In a lidded container, add all of the dressing ingredients and shake vigorously.  Place the dressing in the refrigerator until ready to use.

Combine the spring greens, dried cherries, almonds and chevre in a salad bowl and pour at least 3 tablespoons of the dressing (more if you like) and toss.  Divide the salad between four serving plates and top each with a few chicken slices.  Serve immediately.
